*I'm a frugal mommy and I love to cook home-made meals and bake things. So, I thought I'd share some of our recipes and easy meals that we have. Today we had Easy Pot Roast. We put it in the oven before church and it was ready when we got home. Yummy. You could do the roast in the crock pot. My friend's daughter informed that I shouldn't leave my oven on when I'm not home. I do know that, but my kids are very hungry after being at church all morning.
Easy Pot Roast
Brown Beef Roast in Olive Oil in Skillet
combine 1 can cream of mushroom soup, 1 envelope dry onion soup mix, and 1-2 cups water, pour over roast and cook 4 hours at 325.
** I buy meat when it is marked down and immediately freeze it. We save a lot of money by doing this and if you cook meats in the crock pot or for a long time in the oven at a lower temp. they become very tender.

Adoption Update and Fundraiser
We thought we would be able to finish up the Dossier this week. However, most of documents have to be completely re-done because when we took them to the courthouse to be notarized, the name on the documents didn't match the name that the notary had registered under because she recently got married. So, now we are making phone calls, sending emails, etc to try to get the documents re-done so that we can once again take them to the courthouse to be notarized. After that, they will be sent to the state to check for authenticity.
We are in the process of trying to raise funds for our next two BIG fees that we have to pay when we submit the Dossier. On Friday, June 26 I'll be hosting a Girls Night Out. There will be purses, wallets, and sunglasses for sale. Please bring as many friends as you can think of and come shopping for a good cause. There is no presentation and everyone is bringing a snack to share. Kate, the purse girl, is donating 10% of the profits to our adoption fees. What a blessing.
The boys are spending their last night at Nana and Papa's house. We will meet them in Nashville, TN around lunch for the big trade off. I am anticipating lots of tears since I know for a fact that they would much rather stay and be spoiled there, than return to the daily grind of our house.
